Culinary Training
A Hands-On Pathway into Hospitality
The Um Mami Culinary Training programme is an intensive three-month pathway for young people aged 18 to 35 who want to build practical skills and access employment in hospitality.
Training is 80% hands-on and takes place in a professional kitchen environment. You will learn by cooking, practicing, and working alongside experienced chefs and trainers.
What You’ll Learn
Core culinary techniques
Cooking, pastry, and baking
Kitchen organisation and teamwork
Modern techniques inspired by Moroccan and contemporary cuisine
Responsible cooking practices, with a focus on seasonality and local sourcing
The programme also includes guest sessions with experienced chefs, as Chef Khadija Bensdira or Chef Oussama Sadiq, who share their journeys, advice, and perspectives on working in the culinary world.

Turn Your Food Idea into a Real Project
The Food Business Accelerator (FBA) is an 8-week programme for people who want to develop a food business idea and turn it into a structured, viable project.
Whether you are a home cook, a chef, or simply someone with a strong food idea, the FBA helps you move from concept to action.
What the Programme Covers:
Defining your concept and positioning
Pricing and financial thinking
Branding and identity
Operations and food safety
Market access and communication
The programme also includes chef-led culinary sessions, where you will work on your product, improve quality, and align your offer with real market expectations.
